Since whole nuts fetch a prettier price at market, in India, processing has traditionally been done by hand to ensure the highest output of unscathed kernels.8 What many people don't realise, is that cashews go through an extremely elaborate processing system before they arrive neatly packaged at our supermarkets.
Cashews are expensive because there is just one nut per fruit. Cashews trees have to be farmed, harvested, separated from the false fruit, roasted, cooled, cracked open, peeled, sundried and sorted – and only then can you sell them as raw nuts. The amount of value added is incommensurate to the amount of labour that goes into it。
Factory Cashew Nut Processing Steps:
1. High temperature cooking
First, the shelled cashews should be fumigated at high temperatures in a boiler over 100°C and undergo sterilization, insecticidal and bactericidal processes.
2. Shelling
For cashews that have softened shells after cooking, either by mechanical shelling or professional manual shelling (operator should do skin protection measures), the cashew shelling machine can cut the shell of cashews to obtain cashew kernels.
3. Automatic drying
The cashew nut drying machine uses the principle of air energy heat pump. There are multiple modes for the drying process. According to the characteristics of shelled cashew nuts, the drying parameters can be set through the intelligent control system of the dryer. Most of the water is removed until the peel breaks and the kernels and skin begin to split.
4. Peeling
The cashew peeler uses the principle of gas peeling to remove the cashew skin perfectly and obtain the white cashew nuts.
5. Grading and sorting
After the cashews have been sterilized, roasted, shelled and peeled, they must be graded by grading, color inspection, and sorting before they can become true raw cashew nuts that meet the standards.We usually use a cashew nut grading machine
